Produção de vinhos no cerrado: variedades de uvas e técnicas de produção

Abstract

The present study has it focus on the brazilian winery, wich is the study and cultivantion of grapes for the production of wine or to consume fresh. The grape cultivation represents a new brazilian Market share, having the „Serra Gaúcha‟ as a traditional pole in brazilian vitiviniculture, although other regions of the country are getting highlighted by it‟s high quality wine, in particular the „cerrado‟.To the planting of the grapes in these regions, some technologies are used in order to help on the adaptation of the grapes to the soil and the weather, such as the use of rootstocks, wich are fundamental in the practice of viticulture. In this sense, the goal of the research was making a bibliographic review about the implementation of the grapes Vitis viníferas, specially Syrah and Cabernet Sauvignon, in the „Cerrado‟ to the production of fine wines. To the making of the essay, a bibliographic survey of articles, dissertations, theses and books, between the years of 2001 and 2021, available in the „portal periodicos‟, ScieceDirect, Scielo and Google Academic. It‟s concluded that the use of the rootstocks in vines of the cultivars Syrah and Cabernet Sauvignon are essential to their plantation in the „cerrado‟ to obtain high quality wine with the own terroir. As the type of cultivate used, the ideal agronomic management, the suitability of the culivate regarding to the weather, the right maintence, of the grapes, the adequacy of the production process and the caution with the harvest will influence in the composition of the grapes. Thereby the rootstocks are also essential to produce a high quality wine.
