Abstract: Minas Frescal cheese is one of the most widely consumed dairy products&#xD;
in Brazil. Due to its highly perishable nature, resulting from its high moisture&#xD;
content and the absence of a ripening stage, this product is particularly&#xD;
susceptible to the growth of spoilage and pathogenic microorganisms, especially&#xD;
when produced and marketed without sanitary inspection. In this context,&#xD;
inadequate hygienic and sanitary conditions during production, storage, and&#xD;
refrigeration may compromise its microbiological quality and pose a risk to&#xD;
consumers. Therefore, this study aimed to evaluate the microbiological quality of&#xD;
uninspected Minas Frescal cheese commercialized at open-air markets in&#xD;
Uberlândia, Minas Gerais, Brazil. A total of 25 cheese samples were analyzed for&#xD;
aerobic mesophilic bacteria (AMB), total coliforms at 35 °C (C35), and&#xD;
thermotolerant coliforms at 45 °C (C45). The results were compared with data&#xD;
obtained from a previous study conducted in the same municipality between 2018&#xD;
and 2020. Compared with the previous period, a significant reduction (P &lt; 0.05)&#xD;
was observed in C45 counts, with the mean decreasing from 4.35 to 1.88 Log₁₀&#xD;
MPN/g. However, AMB counts averaged 6.48 Log₁₀ CFU/g, with no significant&#xD;
difference compared with the previous study (P &gt; 0.05). Additionally, 18 (72%)&#xD;
samples showed C35 counts above 3.04 Log₁₀ MPN/g, suggesting unsatisfactory&#xD;
hygienic and sanitary conditions during production and commercialization.&#xD;
Considerable variability in microbiological quality was also observed among&#xD;
cheeses sold by different vendors, indicating a lack of standardization in&#xD;
production and commercialization practices. Furthermore, samples collected on&#xD;
Mondays exhibited mean AMB counts 1.44 Log₁₀ CFU/g higher than those&#xD;
collected on Thursdays (P &lt; 0.05). In conclusion, despite the improvement&#xD;
observed in C45 counts, the evaluated cheeses still presented unsatisfactory&#xD;
microbiological quality, characterized by high AMB and C35 counts and marked&#xD;
variability among the analyzed samples. These findings highlight the need to&#xD;
strengthen good manufacturing practices, microbiological monitoring, and the&#xD;
integration of producers into official inspection services to ensure consumer&#xD;
safety.</description>

Abstract: Minas Frescal Cheese (MFC) is one of the most widely consumed dairy products in Brazil, owing to its high nutritional value and broad consumer acceptance. However, due to its high moisture content and lack of ripening, it is highly susceptible to microbiological contamination when produced and sold without sanitary inspection or the adoption of Good Agricultural and Manufacturing Practices. Under such conditions, its consumption can pose a public health risk, as dairy products are frequently implicated in foodborne disease outbreaks, with Salmonella spp. standing out as a primary etiological agent. Thus, this study aimed to evaluate the occurrence of Salmonella spp. in uninspected Minas Frescal Cheeses sold at open-air markets in the municipality of Uberlândia, Minas Gerais. Samples from 25 cheeses, collected between June and July 2026, were analyzed. Salmonella spp. detection was performed according to ISO 6579-1, followed by molecular confirmation of isolates via polymerase chain reaction (PCR) targeting the ompC and invA genes. The frequency of Salmonella spp. positivity was compared against current regulations (RDC nº 724/2022 and IN nº 161/2022) and across collection days using Fisher's exact test, with a significance level of 5% (p&lt;0,05). Of the 25 samples evaluated, 13 (52%) tested positive for Salmonella spp. Twenty isolates were obtained: two tested positive only for the ompC gene, six exclusively for invA, and twelve tested positive for both genes. A significant association was observed between the day of sale and the occurrence of Salmonella spp. (p = 0,0414), with a higher frequency in samples collected on Mondays (68,75%) compared to those collected on Thursdays (22,22%). Furthermore, cheeses sold on Mondays were 7,70 times more likely to test positive for Salmonella spp. (OR = 7,70; 95% CI: 1,129–42,83). The results demonstrate a high prevalence of Salmonella spp. in uninspected cheeses, indicating a public health risk and the need to strengthen sanitary control measures.</description>

Abstract: The study evaluated the effects of in ovo glycine and taurine inoculation on day-old chicks. &#xD;
Given the increasing pressure for higher productive efficiency in poultry science and the critical importance of the perinatal period for future performance, the potential of these amino acids as metabolic modulators applied during the embryonic stage was investigated. A total of 42 fertile eggs from the Hy-Line W-80 strain were randomly distributed into three experimental groups: control (buffered saline), glycine (3 mg/egg), and taurine (95 mg/egg). Between the 18th and 19th days of incubation, 100 µL of the respective solutions were administered into the amniotic cavity. After hatching, body weight, neonatal quality, and hatchability were evaluated. Data were analyzed using [ANOVA/t-test] with a 5% significance level. The results demonstrated that in ovo inoculation of glycine and taurine did not negatively affect embryonic development. No significant differences were observed in body weight at hatch between the treated groups and the control (p &gt; 0.05). The hatchability rate was 100% in the Control and Glycine groups, whereas the Taurine group showed a rate of 85.7%, with no statistically significant difference. Mean body weights remained similar across groups, indicating the absence of a direct effect of these amino acids on late embryonic growth under the experimental conditions adopted. It was concluded that the technique proved to be safe, although it did not promote significant changes in initial performance at hatch.</description>
